Afaik, the controls for driving modes and paddles are all connected to one cable.

Modern car keys can be quite expensive. Unlike traditional keys, they often have unique, double-sided shapes. Additionally, many newer cars require the key to be programmed via the OBD-II port. My previous Toyota used a VIN-based key cutting process, which I doubt a locksmith could replicate...

You most likely activated the I-pedal; when you come to a stop, the car usually rolls backward; you'll get used to it though..

Completely normal. The car could be keeping the battery at the proper temperature or turning on the dehumidifier.

I hear it when I'm driving around 60mph. It's not very loud, and it goes away when I speed up or slow down slightly. I think it's caused by the electric motors. I'm used to it now, and it actually makes me laugh at times.

Did you get this fixed? Based on what I read, a 12V battery is the common issue why this happens.

There's a recall with this. That's covered under warranty I believe.
